Sage
Sage is just the right spice chicken dishes, just add lemon juice and salt and it's perfect. Albanian sage is so much different from sage from other countries, it has a rich flavor which is unknown to buyers in Miami, Sage is normally sold in supermarkets. In the past few years sage became a very popular spice. You might want to try adding it to dishes with no salt, it give the dish a wonderful taste. and is far healthier than salt.
Zatar (Also called Zahtar)
This traditional and very popular spice is very common throughout the Middle East. Arabs use this spice in most of their food. Here is a good tip; cut pita bread into squares, spread with olive oil and add zatar.bake for 5 minutes at 350°, as simple as it sounds it has got a fantastic taste. This spice

is self made from: sumac with thyme leaves, add some white sesame seeds and salt.
Paprika
Paprika is also a very common spice used all over the world from Morrocca and Spain to Hungary and California. - Each are has it own shape and size in Spain and Morrocco they are small and round and in Hungary and California they are pointed and cone shape.
The taste can range from very mild and slightly sweet to burning hot.
Sweet Paprika is used in many dishes today not only does it give a good flavour it also helps in the colour for baking potatoes and chicken. 
Rozmarine (Rosemary)
Rosemary is also a very popular spice with pine needle-like leaves. Its uses are varied from Food flavouring to cosmetics. Rosemary is used as potpourris to freshen the air, and in cosmetics, disinfectants and shampoos and if used with a shampoo it can lighten blonde hair. - Also Rosemary oil is used as a detterent for head lice in children.

It has also been said by Scientists that the scent of rosemary is an effective memory stimulant. The smell is very pleasant and can make a nice potted plant to sit on your desk at work or close to your children while they are doing there homework.

Garlic
Garlic is a hardy bulbous perennial of the lily family, with narrow flat leaves. It has an attractive flavour and acknowledged medicinal value. It is one of the 'trinity' of flavours along with ginger and onion in Indian cuisines.

Garlic acts as a flavouring agent in variety of dishes. In Pickles it acts as a preservative-flavourant. Garlic pickles and freshly ground garlic chutneys are popular side dishes for rice, snacks and chappathis. Garlic oil are used in ready-made spice-mixes, pharmaceuticals and disinfectants.
Pepper
Pepper is considered as the oldest and best known in the world. India is one of the largest pepper producer in the world. It is mainly cultivated in Kerala, Karnataka and Tamil Nadu. 
Pepper corns are very strong in odour and taste, used in canned foods as a flavouring agent. It is commonly used in all dishes as a very popular spice.
Indian black pepper is of two types; 'Malabar garbled' and 'Thalessary extra Bold'. Several processed form of green pepper are also available (frozen, dehydrated, free-dried and packed in brined). It is exported to many parts of the world.
Cumin
Cumin is the dried fruit of a small herbaceous plant. Cumin adds flavour to foods, liquors and beverages. The spice is of particular value in the blending of Indian curry powder. It also enlivens pulaous, biryanis and kebabs. Cumin has digestive properties and when boiled in water acts as an excellent refreshener. It is also used in medicines, toiletries and perfumery.
Indian cumin grows abundantly in Gujarat, Rajasthan and Utter Pradesh. It is exported in its natural form as well as oil and powdered forms. Exports are mostly to USA, Singapore, Japan, UK

Turmeric
